The winery characteristcs

The "Castellaccio" winery is located in the northeastern part of the Chianti Classico territory, in the valley below the village of Lucolena, near Greve in Chianti. The vinyards are located on the slopes of the Chianti Mountains at an altitude of between 400 and 600 meters characterizing the aromatic tones of the wine produced. All the vinyards belong to the "Consortium of Chianti Classico wines" board. marked with "Gallo Nero" (Black Rooster).
The "Castellaccio" winery is located in the northeastern part of the Chianti Classico territory, in the valley below the village of Lucolena, near Greve in Chianti. The vinyards are located on the hills of the Chianti Mountains at an altitude of between 400 and 600 meters characterizing the aromatic tones of the wine produced. All the vinyards belong to the "Consortium of Chianti Classico wines" marked with "Gallo Nero" (Black Rooster). The name of the estate derives from the actual archaeological site of the old castle of Lucolena, located not too far from Florence, where nowadays only the ruins of the castle with the perimeters of the formwork and housing facilities are still dominating the valley. The estate covers an area of 47 hectares. Part of the vineyards have been recently renovated providing the company with a surface of about 14 hectares. All the vineyards belong to the Chianti Classico consortium and produce about 900 q.li of grapes, for the production of hl. 560 of Chianti Classico. From 2014 the company has joined the program of conversion to organic farming thus using products and production techniques allowed in this type of farming.

Innovative winemaking

The constant attention to technological innovvation has led to implement the processing activities carried out always in the old cellar in the basement of the farm building with a very low environmental impact technology known as "Metodo Ganimede"

The estate pursues environmental improvement through the use of products for organic farming and energy saving, trought the use of tank for the fermentation, performing the step of replacement without use of electricity, but only with the use of CO2 produced by the production cycle.

It is an innovative fermenter, a patented winemaking system that exploits the exceptional natural capacity of fermentation gas ( 40/50 liters of CO2 per liter of must!) to obtain a gentle and effective extraction of the noble substances only.
